Sopa de Ajo - Garlic Soup
1/4 cup extra virgin olive oil
3/4 cup sliced garlic
5 ounces day-old French bread, 4-5 slices
1 tablespoon pimenton (smoked sweet paprika)
4 cups water, chicken or beef stock
4-5 eggs
Salt and pepper
2 tablespoons fresh parsley
Pre-heat the oven to 400 degrees.
Heat the oil in a skillet and fry the garlic until golden.
Using a slotted spoon, remove the garlic and set aside.
Fry the bread slices until golden on each side. Remove and set aside.
Add the paprika to the oil and cook for just a minute.
Add the water or stock and the garlic.
Salt and pepper to taste and cook for 10-15 minutes.
Ladle the soup into ovenproof bowls and carefully break an egg into each bowl.
Top with a slice of fried bread and place in the oven for a few minutes until the eggs have set.
Sprinkle with parsley and serve.
