Arroz con leche - Rice pudding
1 cup bomba short grain rice
4-5 cups milk
1 cup sugar
2 teaspoons vanilla extract
2 tablespoons unsalted butter
2 egg yolks, beaten
Zest of 1/2 lemon
1/2 cup raisins
Cinnamon
Rinse the rice in cold water.
Place in a pan with enough water to cover and cook for 5 minutes.
Remove from the heat, drain and place the rice back in the pan.
Add 4 cups milk and cook over medium heat.
Simmer until the rice is soft but not mushy, stirring occasionally.
If necessary, add more milk.
Add the raisins, vanilla, lemon zest and the sugar, stir.
Remove from the heat, add the egg yolk and butter and stir well.
Allow the rice pudding to cool.
Place in serving bowls and sprinkle with cinnamon.
