Fideos with Clams - serves four
1 pound fideos
1 medium onion, diced
3 cloves garlic, minced
4 ripe tomatoes, diced
4 small potatoes, peeled and cubed
1 pound fresh clams or 2 61/2 ounce cans clams, drained.
1 teaspoon sweet pimenton (smoked sweet paprika)
2 tablespoons fresh parsley, chopped fine
Olive oil
1/4 teaspoon Salt
Sauté the onion, tomato and garlic in the olive oil.
Add the potatoes, pimenton and salt and cook until browned.
Add water to cover and let cook for 10 minutes.
Stir in the fideos and let them cook for approximately 10 minutes.
Add the clams. When the clams have opened, the dish is ready.
If using canned clams cook for approximately 5 minutes.
Sprinkle with parsley and serve.
