Pizza Espaņola (Spanish Pizza with Manchego Cheese) - serves four
Your favorite pre-made pizza dough or large ready-made pizza crust.
8 ounces of Manchego cheese, thinly sliced
3 ounces chorizo, thinly sliced
2 medium ripe tomatoes, sliced
1 clove garlic, minced
Spanish extra virgin olive oil
Preheat oven to 500 degrees. (Or use the temperature recommended by the crust manufacturer)
Lightly oil a baking sheet or pizza stone.
Place the crust on the baking sheet or stone.
Add the minced garlic to 2 tablespoons of extra virgin olive oil and spread the mixture
evenly over the crust.
Add the tomato slices and half the cheese.
Add a layer of the chorizo.
Finally layer the remaining cheese over the chorizo.
Bake until the cheese is bubbly and the crust is slightly browned, approximately 15-20 minutes.
