White Anchovy Canapés - Serving Suggestion
Boquerones - white anchovies- in vinaigrette
Baguette or crusty bread
Finely diced onion
Thinly sliced tomato
Fresh parsley, chopped
Extra virgin olive oil
Cut the bread into medium-sized round and toast lightly.
Place a thin slice of tomato and a bit of chopped onion on each round.
Top with one or two filets of Boquerones on each round.
Dress with a drizzle of olive oil and a sprinkling of parsley.
Serve as a tapa or appetizer.
